Sunday Baking



Made biscuits this morning.  I used the basic recipe but modified it a bit to suit what I had on-hand

2 3/4 cups brown rice flour
1 teaspoon baking powder
1 1/2 teaspoon ground pepper

Combine ingredients in a bowl.  In a separate bowl gently combine

3 ounces of your favourite grated cheese with
8 tablespoons of cold cubed butter.

 It is best to divide the tablespoons in half before gently mixing into the grated cheese.  Add the flour mixture to the cheese and butter, again coarsely mixing.

Now the recipe calls for 3/4 cup buttermilk, which I love but didn't have so instead  I used,

 1 cup of Greek yogurt and
2 tablespoons of soy milk.

 I slowly poured the yogurt and milk into the flour and cheese and gently combine.  Roll the dough onto a floured surface.  Add extra milk, one tablespoon at a time if needed. form the dough into a rectangle and slice with a knife in 1 1/2 inch thick pieces.

Place your biscuits onto a cookie sheet covered with parchment paper and bake for 20 minutes in a 400 degree oven.

For the last ten minutes I added extra grated cheese to the top of the biscuits.  They should be golden brown.  Serve immediately!
